Can I record different hourly rates for an apprentice and an electrician?

Yes. You can add several operatives to one job with their own trade and their own hourly rate, and the labour total reflects each rate.

Can I take a customer signature for the work on my phone?

Will it work in a property with no signal?

You enter the job on the phone while you work. Sending the PDF needs a connection, so if the property has no signal you send the sheet once you are back in range.
